I MADE WELSH RAREBIT JACKET POTATOES - THEY TASTED AMAZING AND TAKE MINUTES TO PREPARE

I love nothing more than a jacket potato slathered in melted cheese and butter.

However, sometimes, I like to mix it up and try a different topping. Some of the most popular jacket potato toppings include baked beans, tuna and mayonnaise, and pulled pork.

So when I came across Pinch of Nom's Welsh rarebit jacket potatoes in their book, Pinch of Nom Everyday Light, I had to give it a try.

The recipe was super simple to follow and surprisingly low calorie considering it tasted so indulgent.

The dish took five minutes to prepare and around 17 minutes to cook with some of the cooking taking place in the microwave.

The recipe tastes delicious served alongside chicken and salad for a main or simply a side salad for lunch.

How to make Welsh rarebit jacket potatoes

Ingredients:

  • Two baking potatoes (around 200g each)
  • Two tsp Worcestershire sauce or Henderson's relish
  • One tsp mustard powder
  • Half tsp garlic granules
  • 75g light spreadable cheese
  • Sea salt and ground black pepper
  • Four spring onions trimmed and thinly sliced
  • Low calorie cooking spray
  • 40g grated cheddar

Method:

1. Preheat the oven to 220C/fan 200C/gas mark 7.

2. Stab the potatoes with a fork and microwave them on high for seven to 10 minutes. They need to be firm but completely cooked. If you don't have a microwave, you can bake the potatoes in the oven for 45 minutes.

3. Take the potatoes out of the microwave and leave them to cool until they can be handled. Then, slice the potatoes in half and scoop out the flesh ensuring the skin is kept in tact.

4. Mash the potato flesh in a bowl with a fork then add the Worcestershire sauce, the mustard powder, garlic granules, spreadable cheese and salt and pepper. Mix and then stir in the spring onions.

5. Spray the outside of each potato skin with the low-calorie cooking spray and put them on a baking tray. Next, scoop the mixture back into the potato skins. Sprinkle with cheese and drizzle the other teaspoon of Worcestershire sauce on top. Put them in the centre of a hot oven for 10 minutes.

6. Remove them from the oven when the cheese is bubbling on top and slightly golden.

Alternatively, these can be cooked, left to cool and then placed in the freezer for another day.
