STIR FRY RECIPE WITH SESAME AND SEASONAL VEGETABLES IS A DELICIOUS SPRING DINNER

Stir fry is the perfect dish to make if you're looking to quickly and easily whip up something all in one-pot.

The centuries-old cooking technique became popular in China as a way to quickly make food while using less fuel and was adapted throughout East Asia.

This particular recipe incorporates seasonal vegetabels such as asapargus, mushrooms and yellow onions, as well as traditional East Asian ingredients such as sesame, soy sauce and ginger, the latter of which is also seasonal, for a delicious seasonal dinner.

Ingredients

  • 355 ml vegetable broth
  • 180 g uncooked long-grain white rice
  • 15 g margarine
  • 15 g sesame seeds
  • 30 ml peanut oil
  • 225 g fresh asparagus, trimmed and cut into 2.5 cm pieces
  • 1 large red bell pepper, cut into 2.5 cm pieces
  • 1 large yellow onion, sliced
  • 280 g sliced mushrooms
  • 2 teaspoons minced fresh ginger root
  • 1 teaspoon minced garlic
  • 45 ml soy sauce
  • 15 ml sesame oil

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a saucepan combine broth, rice and margarine. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes, or until all liquid is absorbed.

  3. Place sesame seeds on a small baking sheet and bake in preheated oven for 5 to 6 minutes, or until golden brown; set aside.

  4. Meanwhile, heat peanut oil in a large skillet or wok over medium-high heat until very hot.

  5. Add asparagus, bell pepper, onion, mushrooms, ginger and garlic and stir-fry for 4 to 5 minutes, or until vegetables are tender but crisp.

  6. Stir in soy-sauce and cook for 30 seconds. Remove from heat and stir in sesame oil and toasted sesame seeds. Serve over rice.
